  • 1 piece White onion Finely diced
  • 3 pieces Tomatoes Diced with juices retained

Preparation

  • Chop the vegetables: Finely dice the red bell peppers and white onions. Dice the tomatoes, keeping the juices.
  • Sauté the onions: Heat olive oil in a pan over medium heat. Add the onions and cook until translucent, about 5 minutes.
  • Add the peppers: Stir in the chopped red bell peppers and sauté for another 3-4 minutes.
  • Incorporate the tomatoes: Add the diced tomatoes to the pan, season with salt and pepper, and let everything simmer for a few minutes.
  • Layer with cheese: Transfer the mixture to a baking dish, dolloping ricotta on top, and sprinkle with fresh herbs.
  • Bake it: Place the dish in a preheated oven at 375°F (190°C) for about 20 minutes, until bubbly and golden.

Notes

To store leftovers, place in an airtight container and refrigerate for up to three days. For longer preservation, consider freezing portions and reheat in the oven to maintain texture.
