  • 2 cloves garlic, minced
  • 8 ounces cream cheese, cut into small cubes
  • 1.5 cups skim milk Can also use 2%, whole, half & half, or heavy cream
  • 1.5 cups good-quality grated Parmesan cheese Freshly grated is best for maximum flavor
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon grated nutmeg Optional

Preparation

  • Begin by placing a large skillet over medium heat.
  • Add the unsalted butter and allow it to melt.
  • Stir in the minced garlic and cook until slightly softened and fragrant.
  • Next, add the cubed cream cheese to the pan.
  • Stir and whisk until the cream cheese starts to melt.
  • Slowly add the milk, whisking continuously to combine until all the cream cheese has melted and the mixture is smooth.
  • Once smooth, stir in the grated Parmesan cheese along with the salt, pepper, and nutmeg if using.
  • Keep whisking until everything is well combined.
  • Use the sauce immediately for the best texture.

Notes

For best flavor, use good quality Parmesan cheese and avoid high heat to prevent scorching. Adjust seasonings to your preference. Store leftovers in an airtight container in the refrigerator for up to three days.
