Ingredients
  

For the fries

  • 2 pounds frozen french fries Shoestring, steak cut, or crinkle—use your preference.

For the toppings

  • 8 ounces ground beef 80/20 for flavor; leaner works if you drain.
  • 1 cup shredded cheddar cheese Sharp cheddar gives more flavor.
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • 2 tablespoons chopped fresh chives Scallions are a good swap.

For seasoning

  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper To taste.

Preparation

  • Preheat oven to the temperature listed on your frozen fries package. Spread fries in a single layer on a baking sheet for even crisping.
  • Bake fries according to package directions until golden and crispy. Keep an eye the last few minutes so they don’t burn.

Cooking

  • While fries bake, heat a skillet over medium. Add the ground beef and break it up with a wooden spoon. Cook until evenly browned, about 6–8 minutes.
  • Drain any excess grease, then season the beef with garlic powder and salt and pepper to taste. Stir to combine.

Assembly

  • When fries are done, transfer them to an oven-safe dish or leave them on the baking sheet if it’s oven-safe. Spread the hot fries in a single layer.
  • Spoon the cooked ground beef evenly over the fries. Sprinkle shredded cheddar over the top.
  • Return to the oven for 2–4 minutes, just until the cheese melts and becomes bubbly.
  • Remove from oven and immediately dollop with sour cream. Sprinkle chopped chives on top. Serve hot.

Notes

Refrigerate leftovers in an airtight container for up to 3–4 days. To reheat, spread leftovers on a baking sheet and bake at 400°F (200°C) for 8–12 minutes to maintain crispness.
