  • 8-10 slices bacon, cooked and chopped Ensure the bacon is crispy for best flavor.
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt To taste.
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes Optional for a kick.
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half For a lighter version, use half-and-half.
  • 2 cups shredded cheddar cheese Medium or sharp.

  • In a large pot, cook the bacon over medium heat until crispy. Remove it from the pot and chop it into bits.
  • In the same pot, heat the butter or olive oil. Add the diced onion and sliced carrots, sautéing until tender (about 5 minutes).
  • Pour in the chicken broth and bring it to a gentle simmer.
  • Stir in the heavy cream, salt, pepper, garlic powder (or minced garlic), thyme, and red chili flakes (if using). Keep stirring until well combined.
  • Add the gnocchi to the pot, cooking for about 2 minutes or until they float and are soft.
  • Finally, stir in your crispy bacon, adjust any seasonings to taste, and enjoy piping hot.

Notes

Ladle the soup into bowls and garnish with extra cheddar cheese and crispy bacon. Serve with crusty bread, a light salad, or roasted vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat on the stove over medium heat, adding broth or cream as needed.
