  • 1 pound chicken breast, cut into bite-sized pieces (about 20–24 pieces) Use boneless, skinless thighs for more flavor if preferred.
  • 8 slices bacon, each slice cut in half Results in 16 halves; opt for thin-cut for better balance.
  • 1/2 cup brown sugar, packed Light or dark brown sugar can be used.
  • 1 teaspoon cayenne pepper Adjust to taste; can be omitted for less heat.
  • Salt and freshly ground black pepper, to taste

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  • In a medium bowl, combine the brown sugar, cayenne pepper, a pinch of salt, and a few grinds of black pepper. Taste a tiny pinch to ensure desired heat level.
  • Pat the chicken pieces dry with paper towels and season lightly with salt and pepper.
  • Wrap each chicken piece with a half slice of bacon, securing if necessary with a toothpick soaked in water.
  • Roll each bacon-wrapped piece in the brown sugar mixture until well coated.
  • Place the bites on the baking sheet with space between them. For crispier bacon, use a wire rack over the baking sheet.

Cooking

  • Bake for 25–30 minutes, rotating the pan halfway through, until the bacon is crispy and chicken reaches 165°F (74°C).
  • For extra browning, broil for 1–2 minutes at the end, watching closely to avoid burning.
  • Let rest for 2–3 minutes before serving warm.

Notes

These bites are great as appetizers or party snacks. Pair with toothpicks and dips like creamy ranch, honey mustard, or sriracha mayo for maximum enjoyment. Leftovers can be stored in an airtight container for 3–4 days.
