  • 2 cups broccoli florets (finely chopped) Steamed until tender
  • 1 cup breadcrumbs Gluten-free breadcrumbs can be used as an alternative
  • 1.5 cups shredded cheddar cheese Sharp cheddar can be used for stronger flavor
  • 1/3 cup grated Parmesan cheese
  • 2 large eggs
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper To taste
  • Cooking spray For greasing the baking sheet

Preparation

  • Preheat your oven to 400°F (200°C).
  • Steam the broccoli florets for about 3-5 minutes until they’re tender but still hold a bit of crunch. Let them cool before chopping finely.
  • In a large mixing bowl, combine the chopped broccoli with breadcrumbs, shredded cheddar cheese, grated Parmesan, eggs, and flour.
  • Season the mixture with garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Roll the mixture into 1-inch balls and place them on a parchment-lined or greased baking sheet.

Baking

  • Bake for 20-25 minutes until golden brown. For extra crispiness, broil for an additional 1-2 minutes, monitoring closely.
  • Let cool for a few moments before serving warm.

Notes

Pairs well with marinara or ranch dipping sauces. Store leftovers in an airtight container for 3-4 days in the refrigerator or freeze for up to 2 months. Reheat in the oven for 10-15 minutes at 350°F (175°C) until warm.
