  • 8 oz Feta cheese Use high-quality Greek feta for the best flavor.
  • 1 cup Cherry tomatoes, halved For a sweet burst of flavor.
  • 1 medium Red bell pepper, chopped Adds color and crunch.
  • 4 large Eggs The star protein source.
  • 2 handfuls Fresh spinach A healthy addition that complements the dish.
  • 2 tbsp Olive oil Essential for flavor.
  • to taste Salt Season to preference.
  • to taste Pepper Season to preference.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a baking dish or individual ramekins, add the crumbled feta cheese, halved cherry tomatoes, and chopped red bell pepper.
  • Drizzle everything with olive oil and generously season with salt and pepper to taste.

Baking

  • Place the dish in the oven and bake for about 20 minutes, or until the tomatoes are softened and the feta begins to melt.
  • Carefully remove from the oven and crack the eggs on top of the baked mixture.
  • Return to the oven and bake for an additional 10-15 minutes, depending on how runny you like your yolks.

Serving

  • Add fresh spinach before serving, giving a vibrant touch to the dish.

Notes

Feel free to swap out any veggies you might not have. Zucchini or even kale could work wonderfully in place of spinach. Pair with crusty bread or a fresh salad.
