  • 2.5 cups grape tomatoes, washed and dried
  • 8 oz brick of feta cheese Opt for high-quality for best flavor
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 5 tablespoons olive oil 3 tablespoons for baking, 2 tablespoons for drizzling
  • 0.25 cup chopped fresh basil
  • 12 oz bow tie pasta, cooked and drained Keep warm before mixing in

Preparation

  • Preheat your oven to 350°F.
  • In a medium-sized baking dish, add the grape tomatoes. Create a well in the center and place the feta cheese there.
  • Drizzle 3 tablespoons of olive oil over the tomatoes and feta, followed by the Italian seasoning and salt.
  • Add the remaining 2 tablespoons of olive oil over the top of the feta cheese.
  • Bake for 30-35 minutes, or until the tomatoes burst and the cheese softens.
  • Remove from the oven and stir the cheese and tomatoes together until well combined.
  • Mix in the chopped fresh basil, then fold in the cooked pasta, ensuring everything is well coated.
  • Serve hot and enjoy!

Notes

For variations, consider sun-dried tomatoes, roasted veggies, or using a plant-based feta for a vegan option. Serve with a light salad or garlic bread.
