Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced

Seasonings and Oil

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, mix together the cherry tomatoes, zucchini, bell pepper, and feta cheese.
  • Drizzle everything with olive oil and season with salt, pepper, and dried oregano.

Baking and Combining

  • Bake for about 30 minutes until the vegetables are tender and the feta is beautifully golden.
  • While the veggies are roasting, cook the pasta according to the package instructions.
  • Drain the pasta and combine it with the baked vegetable and feta mixture.
