Ingredients
  

Main Ingredients

  • 2 fillets salmon fillets Fresh or thawed if frozen
  • 300 g spinach, thawed and drained Fresh spinach can also be used, sautéed down
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 200 g sour cream Can be substituted with a dairy-free alternative
  • 150 g mozzarella cheese Can be substituted with feta for a different flavor
  • 1 tbsp olive oil
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F).
  • In a pan over medium heat, add the olive oil and sauté the sliced onion until it’s translucent.
  • Add the minced garlic and cooked spinach to the pan, stirring until heated through; season with salt and pepper.

Baking

  • Lay the salmon fillets in an oven-safe dish.
  • Spoon the spinach and onion mixture evenly over each fillet.
  • Spread sour cream on top of the spinach mixture, then sprinkle the mozzarella cheese generously over everything.
  • Bake in the preheated oven for 20-25 minutes, until the salmon flakes easily with a fork and the cheese is bubbly and golden.
  • Remove from the oven and allow it to cool for a few moments before serving.

Notes

For a rustic presentation, plate directly from the baking dish. Pair with a light salad or roasted potatoes. Store leftovers in an airtight container in the fridge for up to 2 days; reheat gently.
