  • 2 cups old-fashioned rolled oats
  • ½ cup honey or maple syrup
  • ¼ cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips or chopped nuts (optional)

Preparation

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  • In a large bowl, mash bananas until smooth.
  • Add honey (or maple syrup), melted coconut oil, and vanilla. Whisk until combined.
  • In a separate bowl, mix oats, cinnamon, baking soda, and salt.
  • Stir dry ingredients into the wet mixture until evenly coated.
  • Fold in chocolate chips or nuts if using.
  • Spread the batter evenly in the prepared dish, smoothing the top with a spatula.

Baking

  • Bake for 22–25 minutes or until the edges are golden and the center is set.
  • Allow to cool for at least 15 minutes before slicing into 12 bars.

Notes

Storage: Keep in an airtight container at room temperature for 3 days, or refrigerate for up to a week. Freezer-Friendly: Wrap bars individually and freeze for up to 3 months. Substitutions: Swap honey for maple syrup to make these bars vegan. Use almond butter or peanut butter for extra richness.
