  • 4 slices sourdough bread Can substitute with rye or other bread
  • 4 slices cheddar cheese Sharp cheddar or pepper jack can be used
  • to taste BBQ sauce Use high-quality BBQ sauce
  • butter for grilling Generously butter the bread for a crispy crust

Instructions
 

Preparation

  • Heat a skillet over medium heat.
  • Butter one side of each slice of bread generously.
  • Place two slices of bread in the skillet, buttered side down.
  • Layer with shredded brisket, a drizzle of BBQ sauce, and a slice of cheddar cheese.
  • Top with the remaining slices of bread, buttered side up.

Cooking

  • Grill until golden brown, then carefully flip and cook until the cheese has completely melted.
  • Slice in half and serve warm.
