  • 2 pieces Flatbreads (store-bought naan, pita, or thin flatbreads)
  • 1 cup Cooked chicken breast, shredded (rotisserie or leftover)
  • 1/2 cup BBQ sauce (your favorite brand or homemade) For lower sodium, choose a low-salt BBQ sauce.
  • 1 cup Shredded mozzarella cheese Or a mix of mozzarella and cheddar for extra tang.
  • 1/4 cup Red onion, thinly sliced Milder if soaked in cold water for 5 minutes.
  • 2 tablespoons Fresh cilantro, chopped Optional: sub parsley or green onion.
  • 1 tablespoon Olive oil For brushing.

Preparation

  • Preheat the oven to 400°F (200°C). Arrange a rack in the middle for even browning.
  • In a bowl, combine the shredded chicken with 1/2 cup BBQ sauce until the chicken is well coated. Taste and add a little more sauce if you prefer a stronger flavor.
  • Place the flatbreads on a baking sheet and brush each lightly with olive oil to help them crisp and prevent sogginess.
  • Spread the BBQ chicken mixture evenly across the flatbreads, leaving a tiny border for a crust.
  • Top each flatbread with shredded mozzarella and scatter the thinly sliced red onion on top.

Cooking

  • Bake in the preheated oven for 10–12 minutes, or until the cheese is melted, bubbly, and the edges of the flatbread are golden. Watch after 8 minutes as ovens vary.
  • Remove from the oven and sprinkle with chopped cilantro right before serving.

Notes

Serve the flatbreads hot, paired with a green salad, sweet potato fries, or a citrusy drink for the best experience. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
