  • 12 pieces slider buns, split
  • 4 cups cooked shredded chicken *Use pre-cooked chicken for convenience.
  • 1 cup BBQ sauce (more if desired)
  • 1/4 cup red onion, thinly sliced
  • 1 cup grated mozzarella
  • 1/2 cup grated smoked gouda
  • 2 tablespoons fresh cilantro leaves, roughly chopped
  • 2 tablespoons unsalted butter
  • Fresh ground black pepper, to taste

Instructions
 

Preparation

  • Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper and lightly spray with nonstick cooking spray.
  • Place the bottoms of the slider buns into the prepared baking dish.
  • In a small bowl, mix the shredded chicken with 1/2 cup of the BBQ sauce until fully coated.
  • Spread the chicken evenly over the buns, then drizzle the remaining BBQ sauce on top.
  • Sprinkle mozzarella, red onion, smoked gouda, and 1 tablespoon of cilantro evenly over the chicken. Add black pepper if desired.
  • Place the top buns over the sliders.

Baking

  • Cover the dish with foil and bake for 15 minutes.
  • While baking, melt the butter and stir in the remaining cilantro.
  • Remove the foil and brush the tops of the buns with the cilantro butter.
  • Bake uncovered for another 10 minutes, or until golden brown on top.
  • Serve immediately.

Notes

Add pickles after baking for a tangy crunch. Swap gouda for cheddar, provolone, or pepper jack for a flavor twist. Make ahead by assembling the sliders and refrigerating; bake just before serving. Serve with coleslaw for a complete game day meal.
