Main Ingredients

  • 2 breasts Chicken breasts Cut into bite-sized pieces
  • 1 cup Pineapple chunks Fresh or canned, well-drained
  • 2 cups Bell peppers Any color, cut into chunks
  • 1 medium Onion Cut into chunks
  • 1/2 cup BBQ sauce
  • 1/2 cup Teriyaki sauce
  • 8 sticks Skewers If using wooden, soak in water for 30 minutes
  • to taste Salt and pepper

Preparation

  • Begin by cutting the chicken breasts into bite-sized pieces.
  • In a large bowl, combine equal parts of BBQ sauce and teriyaki sauce.
  • Add the chicken pieces into the marinade and let them sit for at least 30 minutes to soak up all that flavor.
  • While the chicken marinates, cut the pineapple, bell peppers, and onion into chunks.

Grilling

  • Once marinated, thread the chicken, pineapple, bell peppers, and onion onto the skewers, alternating them for a colorful presentation.
  • Preheat your grill to medium-high heat, ensuring it’s ready to create those beautiful grill marks.
  • Grill the kabobs for about 10-15 minutes, turning them occasionally, until the chicken is fully cooked to an internal temperature of 165°F (75°C).

Notes
