Main ingredients

  • 1 lb Ground beef Can be substituted with ground turkey for a leaner option.
  • 2 cups Pasta (your choice) Feel free to use whole wheat or gluten-free pasta.
  • 2 cups Mixed vegetables (fresh or frozen) Adds nutrition and color.
  • 2 cups Beef broth or stock Your favorite brand will work.
  • 1 cup Cheese (optional) Recommended for a bubbly finish.
  • 1 teaspoon Salt Assorted spices can be adjusted to taste.
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large, oven-safe pot, brown the ground beef over medium heat, breaking it up as it cooks.
  • Once the beef is browned, drain the excess fat and stir in the pasta and mixed vegetables.
  • Add the beef broth and spices, mixing until everything is well combined.
  • Bring the mixture to a gentle simmer, then cover with a lid or foil.

Cooking

  • Bake in the preheated oven for about 25-30 minutes, until the pasta is tender and the flavors have melded.
  • Optionally, top with cheese and return to the oven for an additional 5 minutes for a bubbly, golden finish.

Notes

Best served with a fresh salad or garlic bread. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently with a splash of beef broth if necessary.
