  • 2 cups broccoli florets Fresh broccoli for best flavor.
  • 1 cup cherry tomatoes, halved Add for sweetness and color.
  • 1/2 cup red onion, diced Can substitute with green onions.
  • 1/2 cup olives, chopped Experiment with different varieties.
  • 1/2 cup feta cheese, crumbled Use your favorite cheese if desired.

Dressing

  • 1/4 cup olive oil Extra virgin for better flavor.
  • 2 tablespoons lemon juice Freshly squeezed recommended.
  • 1 teaspoon garlic powder Adjust according to taste.
  • Salt and pepper to taste Season to your preference.

Preparation

  • Start by cooking the pasta according to package instructions. Once done, drain and rinse it with cold water to cool it down.
  • In a large bowl, combine the cooked pasta with broccoli florets, halved cherry tomatoes, diced red onion, chopped olives, and crumbled feta cheese.
  • In a smaller bowl, whisk together the olive oil, lemon juice, garlic powder, and season with salt and pepper.
  • Pour the dressing over the pasta and veggies, tossing everything together until well-coated.
  • Finally, chill the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

Serve chilled, garnished with extra feta and fresh herbs. Pairs well with grilled chicken or fish.
