  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil or avocado oil
  • 1 juice from lime
  • ½ teaspoon sea salt or pink salt

  • In a mixing bowl, combine the diced mangoes, finely chopped onion or shallot, and the chopped jalapeño pepper.
  • Add the chopped bell pepper, cilantro, and minced garlic to the mix.
  • Drizzle in the olive oil and lime juice to enhance the flavor.
  • Sprinkle with sea salt and black pepper.
  • Gently mix all the ingredients together, being cautious not to mash the mango too much.
  • Serve immediately, or store in the refrigerator for up to 5 days.

Notes

Choose mangos that are ripe but still firm for the best texture. Let the salsa sit for at least 30 minutes after making to allow flavors to marry beautifully. Can store in an airtight container for up to 5 days.
