  • 8 ounces pasta (your choice, rotini or penne works well)
  • 4 slices bacon
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version
  • Salt and pepper to taste
  • Lettuce or spinach for serving

Preparation

  • Begin by cooking the pasta according to package instructions. Drain and rinse it under cold water to stop the cooking process.
  • In a skillet, cook the bacon over medium heat until it’s crispy. Once cooked, crumble the bacon into bite-sized pieces and set aside.
  • In a large mixing bowl, combine the cooled pasta, crumbled bacon, halved cherry tomatoes, and diced avocado.
  • Add the mayonnaise, mixing everything until well combined. Ensure each ingredient gets a fair coating.
  • Season your salad with salt and pepper to taste, and give it another gentle stir.
  • Chill in the refrigerator for at least 30 minutes to let the flavors meld together.
  • Serve the salad cold on a bed of crisp lettuce or fresh spinach.

Notes

This salad is easy to store! Keep leftovers in an airtight container in the refrigerator for up to three days. Note that avocado may brown slightly but won't affect taste. Consider omitting avocado before refrigeration and adding it just before serving for longer storage.
