  • 1 cup blueberries (fresh or frozen) If using frozen, thaw and drain before use.

For the Toast

  • 6 slices thick-cut bread Day-old bread works well for texture.
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon cinnamon
  • Butter for cooking Use as needed to coat the skillet.
  • Maple syrup For serving.

Preparation

  • In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract until smooth. Gently fold in the blueberries.
  • Spread the cream cheese mixture onto three slices of bread and top with the remaining slices to form sandwiches.

Cooking

  • In another bowl, whisk together the eggs, milk, and cinnamon until well combined.
  • Heat a skillet over medium heat and add a tablespoon of butter.
  • Dip each sandwich into the egg mixture, coating both sides generously.
  • Cook the sandwiches in the skillet until each side is golden brown, about 3-4 minutes per side.
  • Serve warm, drizzled with maple syrup.

Notes

Consider adding toppings like whipped cream, powdered sugar, or extra blueberries. A dollop of lemon curd can also enhance the flavors.
