  • 1/4 cup red onion, thinly sliced

Dressing Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey Can replace with maple syrup for a vegan version.
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  • In a small bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until smooth.
  • In a large mixing bowl, toss the salad greens, blueberries, pistachios, feta cheese, and sliced red onion.
  • Drizzle the prepared dressing over the salad and gently toss to coat all ingredients evenly.
  • Serve immediately or let it chill for a bit to allow flavors to meld together.

Notes

Store leftovers in an airtight container in the refrigerator. Best consumed within 1-2 days. To enhance flavors, make the dressing ahead of time and let it sit at room temperature.
