Ingredients
  

For the marinade

  • 1/4 cup bourbon Adds a rich flavor to the dish.
  • 1/4 cup peach jam Can substitute with apricot or orange marmalade.
  • 2 tablespoons olive oil Healthy fat that aids in cooking.
  • 2 tablespoons soy sauce Adds umami depth.
  • 2 cloves minced garlic For aromatic goodness.
  • 1/2 teaspoon black pepper Essential seasoning.
  • 1/2 teaspoon salt Essential seasoning.

For the salmon

  • 4 pieces salmon filets Fresh is always best, but frozen works too.
  • 1 cup sliced fresh peaches Add alongside the salmon in the skillet.

Preparation

  • In a bowl, mix together the bourbon, peach jam, olive oil, soy sauce, minced garlic, salt, and black pepper until well combined.
  • Place the salmon filets in the marinade and let them soak up the flavors for at least 30 minutes.
  • Preheat your oven to 400°F (200°C).

Cooking

  • Heat a skillet over medium-high heat, then add the marinated salmon filets skin-side down. Sear for 3-4 minutes until golden brown.
  • Surround the salmon with sliced peaches in the skillet.
  • Transfer the skillet to the oven and roast for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve immediately, drizzling the caramelized marinade over the salmon and peaches for an extra burst of flavor.

Notes

To enjoy later, store in an airtight container; lasts up to 3 days in the refrigerator or 1 month in the freezer. Reheat gently to avoid drying out. For a bolder flavor, marinate longer or add a pinch of cayenne for a kick. Experiment with fruits like mango or pineapple.
