Ingredients
  

For the Salmon & Marinade

  • 4 filets salmon filets Choose filets of similar thickness for even cooking.
  • 1/4 cup bourbon Adjust amount for milder boozy note.
  • 1/4 cup peach preserves Can reduce for a lighter sweetness.
  • 2 tablespoons olive oil Use extra-virgin for flavor.
  • 1 teaspoon salt Adjust based on taste.
  • 1/2 teaspoon black pepper Use to taste.

For the Fruit

  • 2 peaches fresh peaches, sliced Can substitute with thawed frozen peach slices.

Preparation

  • In a bowl, mix bourbon, peach preserves, olive oil, salt, and black pepper to create the marinade.
  • Marinate the salmon filets in the marinade for at least 30 minutes.
  • Preheat an oven to 400°F (200°C).

Cooking

  • Heat a skillet over medium-high heat and sear the salmon filets skin-side down for about 4–5 minutes until crispy.
  • Flip the filets and add the sliced peaches to the pan.
  • Transfer the skillet to the oven and roast for an additional 10–12 minutes or until the salmon is cooked through.
  • Serve the salmon topped with the caramelized peaches and glaze.

Notes

Pat salmon skin dry before marinating for the crispiest sear. Monitor closely when cooking to avoid burning the sugars in the marinade.
