Ingredients
  

For the Burrito

  • 4 patties hash brown patties
  • 2 pieces burrito-sized flour tortillas, warmed
  • 4 pieces eggs (for scrambled eggs) about 1 recipe scrambled eggs
  • 4 strips crispy cooked beef bacon
  • 1 cup shredded cheddar cheese
  • 4 tablespoons salsa of choice for topping
  • to taste Salt and pepper

Preparation

  • Preheat the oven to 400°F.
  • Place the hash brown patties on a lightly greased baking sheet and bake for 6 to 7 minutes.
  • Flip and bake for another 6 to 7 minutes until crisp.
  • Lay a warm tortilla on a clean surface.
  • Spoon half of the scrambled eggs onto the center.
  • Add 1/4 cup shredded cheese over the eggs.
  • Place 2 strips of crispy beef bacon on top.
  • Add another 1/4 cup shredded cheese for extra melt and structure.
  • Top with 2 crispy hash browns.
  • Season with salt and pepper and add 2 tablespoons of your favorite salsa.
  • Fold the short sides inward, then roll the burrito tightly from the bottom up.
  • Place seam-side down on a baking sheet and repeat with the second tortilla.
  • Toast in the oven for 3 to 4 minutes, flip and toast another 2 minutes until the cheese melts and the tortilla is lightly crisp.
  • Serve warm.

Notes

Warm tortillas briefly to prevent cracking and make rolling easier. Add sautéed peppers, onions, or spinach for extra flavor and nutrients. Use whole wheat or high-protein tortillas for added nutrition. Make extra burritos and freeze them; reheat in the oven or air fryer for a quick breakfast.
