  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon

For the Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk (or almond milk)
  • ½ tsp vanilla extract
  • pinch cinnamon (optional)

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla, mixing well.
  • In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Gradually add to wet ingredients.
  • Scoop dough into balls (about 2 tbsp each) and place on prepared baking sheet. Flatten slightly.

Baking

  • Bake for 10–12 minutes, until edges are golden and centers are soft. Let cool on a wire rack.

Making the Glaze

  • Whisk powdered sugar, milk, vanilla, and cinnamon until smooth. Drizzle over cooled cookies.

Notes

Store cookies in an airtight container for up to 4 days or freeze for 2 months. Use coconut sugar instead of brown sugar for a lighter option. Swap butter with vegan margarine for dairy-free.
