  • 12 large large eggs
  • 2 cups whole milk Use room temperature for fluffier texture.
  • 2 cups shredded sharp cheddar cheese Feel free to experiment with different cheese types.
  • 1 cup diced ham or cooked sausage Choose your preferred meat option.
  • 1 cup chopped spinach Can use fresh or thawed.
  • 1 medium red bell pepper Diced.
  • 1 small onion Finely chopped.
  • 1 cup biscuit mix
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg Optional for warmth.
  • as needed Butter or oil For greasing the baking dish.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a large baking dish with butter or oil.
  • In a skillet, sauté the chopped onion and diced red bell pepper until tender and slightly caramelized.
  • In a large bowl, beat the eggs and mix in the milk, salt, pepper, garlic powder, and nutmeg.
  • Gradually add the biscuit mix into the egg mixture, stirring until combined.
  • Fold in the sautéed vegetables, spinach, cheese, and ham (or sausage).
  • Pour the mixture into your prepared baking dish and bake for about 45 minutes, or until the top is golden and set.

Notes

Serve with a fresh fruit salad or crispy hash browns. Store leftovers in an airtight container in the fridge for up to 4 days. Can be frozen for longer storage. Reheat in the oven or microwave.
