  • 2 cups Shredded cooked chicken Use rotisserie chicken for quicker preparation.
  • 1/2 cup Buffalo sauce Adjust based on heat preference.
  • 10-12 pieces Tortillas Flour or corn, depending on preference.
  • 1 cup Cheddar cheese, shredded
  • to taste Blue cheese or ranch dressing For dipping.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine shredded chicken with buffalo sauce until well-coated.
  • Take a tortilla and place a spoonful of the buffalo chicken mixture and a sprinkle of cheddar cheese in the center.
  • Roll the tortilla tightly and place it seam-side down on a baking sheet. Repeat until all tortillas are filled.

Baking

  • Bake for about 15-20 minutes, or until they are crispy and golden brown.
  • Serve the taquitos with blue cheese or ranch dressing for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in a 375°F (190°C) oven until warmed through.
