Pasta and Sauce Base

  • 12-14 oz short pasta or spaghetti Use your favorite type of pasta.
  • ½ cup olive oil
  • 1 small shallot, peeled and chopped
  • 6 cloves garlic, peeled and sliced
  • 4 pints cherry tomatoes (approximately 8 cups) Use fresh, ripe tomatoes for the best flavor.
  • to taste salt and pepper Adjust according to preference.
  • ¼ teaspoon chili pepper flakes Adjust for desired heat.
  • 1 pinch sugar (optional) To balance acidity.
  • 2 large sprigs basil Whole sprigs for cooking.
  • 1 cup coarsely chopped fresh basil for serving
  • Parmesan cheese, freshly grated (for serving) To taste.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Add shallots, season lightly with salt, and cook while stirring frequently until softened (about 2-3 minutes).
  • Add garlic and continue to cook for another minute until fragrant.
  • Introduce cherry tomatoes, basil sprigs, and chili flakes to the skillet, swirling to distribute evenly.
  • Cook until tomatoes begin to burst (about 4-5 minutes).
  • Stir and continue cooking until the mixture forms a creamy sauce (approximately 8-10 minutes).
  • While the sauce simmers, cook pasta according to the package directions.
  • Drain the pasta, reserving a bit of water, and combine it with the sauce in the skillet.
  • Add chopped basil and adjust seasoning to taste.
  • Serve with freshly grated Parmesan cheese.

Notes

Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water or olive oil to revive the sauce.
