  • 1.5 lbs boneless, skinless chicken breasts, cut into cutlets
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (for garnish)

Preparation

  • Pat chicken breasts dry and season both sides with paprika, onion powder, salt, and pepper.

Cooking

  • Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden brown and fully cooked (165°F internal temp). Transfer to a plate.
  • In the same skillet, melt 2 tbsp butter. Add garlic and sauté for 1 minute until fragrant.
  • Pour in chicken broth and scrape up browned bits. Stir in heavy cream and Parmesan. Simmer 3–4 minutes until sauce slightly thickens.
  • Return chicken to the skillet and spoon sauce over the top. Cook another 2 minutes so flavors meld.
  • Garnish with parsley and a squeeze of lemon juice if desired. Serve hot with mashed potatoes, rice, or warm bread to soak up the sauce.

Notes

Refrigerate leftovers in an airtight container up to 3 days. Reheat gently on the stove with a splash of broth. You can swap heavy cream for half-and-half or evaporated milk for a lighter option. For extra indulgence, consider adding sautéed mushrooms or caramelized onions for more flavor depth.
