Cooking

  • In a large pot, cook sliced andouille sausage over medium heat until browned, about 5-7 minutes.
  • Add the chopped onions, bell peppers, and celery; sauté until the vegetables are softened, about 4-5 minutes.
  • Stir in the diced potatoes along with Cajun spices and chicken broth. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, approximately 15 minutes.
  • Once the potatoes are ready, stir in the heavy cream and shredded cheddar cheese until melted and well-combined.
  • Season with salt and pepper to taste, and serve warm.

Notes

Serve topped with additional cheddar cheese, fresh parsley, and with crispy French bread or a light salad on the side. A dash of hot sauce can add extra zing.
