Ingredients
  

For the chicken filling

  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tsp Italian seasoning
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 3–4 large flour tortillas
  • 1 tbsp chopped fresh parsley (optional for garnish)

Instructions
 

Preparation

  • In a bowl, toss chicken pieces with salt, pepper, paprika, and Italian seasoning until evenly coated.
  • Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add the chicken and cook for 6–8 minutes, stirring occasionally, until golden brown and fully cooked through.
  • Stir in the diced red and green bell peppers and cook for another 2–3 minutes until slightly softened.
  • Lower the heat, then add the cheddar, mozzarella, and Parmesan cheese. Stir until melted and the chicken is coated in a creamy, cheesy garlic sauce.
  • Warm the tortillas slightly to make them flexible. Spoon the cheesy chicken mixture down the center of each tortilla.
  • Fold in the sides and roll tightly. Place the wraps seam-side down in a clean skillet over medium heat for 1–2 minutes per side until golden and crisp.
  • Slice the wraps in half, sprinkle with fresh parsley if desired, and serve warm with ranch or garlic sauce for dipping.

Notes

Wrap any leftovers in foil and refrigerate for up to 2 days. Reheat in a skillet or oven to keep them crispy. Use Monterey Jack or pepper jack cheese for a spicy kick, or add spinach for a fresh twist. Cook the filling ahead of time and store it in the fridge for up to 3 days; assemble and grill when ready to eat. Pair with a side salad, potato wedges, or roasted veggies for a complete meal.
