  • 1 lb baby potatoes, quartered
  • 12 oz smoked beef sausage, sliced into ¼-inch rounds
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup sour cream (optional for serving)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • 2 tbsp chopped green onions or parsley for garnish

Preparation

  • Preheat oven to 400°F (200°C) and lightly grease your baking dish or line it with foil.
  • In a large mixing bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, onion powder, and black pepper until evenly coated.
  • Mix in the sliced smoked sausage, making sure everything is well combined.

Baking

  • Spread the mixture evenly in the baking dish and bake uncovered for 35 to 40 minutes, stirring halfway through, until the potatoes are tender and golden brown.
  • Sprinkle shredded cheddar over the top and return to the oven for 5 minutes, just until the cheese melts.

Serving

  • Garnish with chopped green onions or parsley. Serve warm with a side of sour cream for dipping if desired.

Notes

For crispier potatoes, bake the potatoes alone for 15 minutes before adding the sausage. You can also mix in chopped bell peppers, broccoli, or onions for extra color and nutrition. Cheese options include swapping cheddar for Monterey Jack, Colby, or a sharp blend. Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven to keep everything crisp and melty.
