  • 2 pounds baby red potatoes, diced into bite-sized pieces
  • 12 ounces smoked beef sausage, sliced into rounds
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1.5 cups shredded cheddar cheese
  • 2 tablespoons chopped green onions (optional garnish)
  • Salt and black pepper, to taste

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C).
  • Dice potatoes into even cubes and place in a large mixing bowl.
  • Drizzle with olive oil, sprinkle with ranch mix, salt, and pepper. Toss until evenly coated.

Cooking

  • Spread potatoes onto a greased baking sheet. Roast for 20 minutes, flipping halfway.
  • Stir in sliced smoked beef sausage and bake for another 10–12 minutes until potatoes are golden and sausage is sizzling.
  • Sprinkle shredded cheddar over the top. Bake 3–5 minutes until cheese is melted and bubbly.

Serving

  • Garnish with green onions and serve hot straight from the pan.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven for best texture. Swap cheddar for mozzarella, Colby Jack, or pepper jack for extra flavor. Dice potatoes in advance and store in cold water in the fridge to save time on busy nights. Pair with a fresh green salad or steamed broccoli for a complete meal.
