  • 500 g chicken, cut into pieces Bone-in chicken can be used for richer flavor.
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 medium tomatoes, chopped
  • 1 tablespoon garam masala
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder Add green chilies for extra kick.
  • to taste salt
  • as needed Fresh coriander for garnish
  • as needed Basmati rice for serving

Cooking

  • Heat the vegetable oil in a large pan over medium heat. Once hot, add the chopped onions. Sauté until they turn golden brown.
  • Add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
  • Toss in the chicken pieces, ensuring each piece is well-coated in the onion mixture. Cook for about 5 minutes until browned.
  • Sprinkle in the garam masala, cumin, turmeric, chili powder, and salt. Cook for 1-2 minutes, letting the spices bloom.
  • Stir in the chopped tomatoes, mixing everything well. Cover the pan and let it simmer for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the sauce thickens up beautifully.
  • Serve hot, garnished with fresh coriander and a side of fluffy basmati rice.

Notes

For added flavor, marinate the chicken in yogurt and spices the day before. Fresh spices enhance the flavors further. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months. To reheat, thaw overnight in the fridge and warm in a pot over low heat.
