  • 3-4 pieces boneless, skinless chicken breasts
  • amount Lo Mein noodles (fresh or dried) Prepare according to package instructions
  • 1 piece red bell pepper, sliced
  • 1 piece yellow bell pepper, sliced
  • 2 pieces carrots, thinly sliced
  • 2 pieces green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil plus additional for flavor
  • 3 cloves fresh minced garlic

Preparation

  • Cook the noodles: Prepare the Lo Mein noodles according to package instructions until al dente. Drain and set aside.
  • Sauté the chicken: In a large skillet or wok over medium-high heat, add a drizzle of sesame oil. Add the chopped chicken and cook for about 6-8 minutes, stirring occasionally, until golden brown and fully cooked. Remove from the skillet and set aside.
  • Stir-fry the veggies: In the same skillet, toss in the red bell pepper, yellow bell pepper, carrots, and green onions. Stir-fry for about 3-4 minutes until they are tender yet crisp.
  • Combine it all: Return the chicken to the skillet with the vegetables. Add the cooked Lo Mein noodles, soy sauce, additional sesame oil, and minced garlic. Toss everything together until well combined and heated through.
  • Serve: Dish out the Chicken Lo Mein while it’s hot and enjoy it with extra soy sauce if desired.

Notes

For best results, don’t overcook the noodles. Feel free to customize with additional vegetables or alternative proteins such as shrimp or tofu.
