Main Ingredients

  • 2 cups cooked chicken, shredded Freshly cooked or rotisserie chicken works best.
  • 1 cup uncooked long-grain rice Make sure to use long-grain rice.
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese Can substitute with pepper jack for a spicier kick.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, uncooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, milk, garlic powder, onion powder, and black pepper. Stir until everything is well blended.
  • Pour the mixture into a greased 9x13-inch baking dish, making sure it’s evenly spread.

Cooking

  • Cover the baking dish with foil and bake for 45 minutes.
  • After 45 minutes, remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes until the cheese is bubbly and golden.
  • Allow the casserole to rest for 5 minutes before serving.

Notes

This casserole is great on its own but can be served with a salad or garlic bread for a complete meal. For added crunch, consider toasting stale bread with garlic butter as a topping before baking.
