Ingredients
  

For the Chicken

  • 3 pounds boneless skinless chicken thighs (or boneless skinless chicken breasts sliced in half lengthwise)
  • 2 tsp olive oil
  • 4-5 tbsp water (for pan frying cooking method, optional) Optional, depending on cooking method

For the Marinade

  • 1 can chipotle peppers in adobo sauce (7 oz can)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 cloves garlic
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional) Optional
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

  • In a blender, combine chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander, smoked paprika, salt, and pepper. Blend until smooth.
  • Marinate the chicken thighs (or breasts) in the sauce for at least 1 hour, preferably overnight in the fridge for deeper flavor absorption.

Cooking

  • Preheat your grill, oven, or air fryer.
  • If using the grill, cook the chicken over medium heat for about 6-7 minutes on each side until the internal temperature reaches 165°F.
  • For oven-roasting, set the chicken on a baking sheet and roast at 425°F for 25-30 minutes.
  • For air frying, cook at 400°F for about 18-20 minutes.
  • Allow the chicken to rest for a few minutes before slicing.

Notes

For the best flavors, marinate the chicken overnight. You can store leftovers in an airtight container for 3-4 days in the refrigerator or freeze for up to 2 months.
