  • 2 cups cottage cheese
  • 2.5 cups rolled oats
  • 2 cups egg whites
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 cup chocolate chips Use mini chocolate chips for even distribution.

Preparation

  • Add the cottage cheese, rolled oats, egg whites, vanilla extract and cinnamon to a blender.
  • Blend until the mixture becomes smooth and pourable.
  • Transfer the blended batter to a bowl and gently fold in the chocolate chips.
  • Preheat a non-stick skillet or griddle over medium heat and lightly grease as needed.
  • Pour the batter onto the heated surface, forming pancakes of your desired size.
  • Cook for 2 to 3 minutes per side, or until each pancake is golden brown and cooked through.
  • Serve warm with your favorite toppings such as berries, yogurt, honey or syrup.

Notes

Let the batter sit for 2 minutes after blending to thicken slightly before cooking. Lower the heat if the pancakes brown too quickly; they need a little extra time to cook through due to protein content. Freeze leftover pancakes for quick grab-and-go breakfasts.
