Ingredients
  

Brownie Base

  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 4 large eggs At room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with almond flour for gluten-free
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt

Mousse Topping

  • 1 cup heavy cream For the mousse
  • 8 ounces bittersweet chocolate, chopped Can use dark chocolate instead
  • Whipped cream for serving (optional)
  • Cocoa powder for dusting (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan.
  • In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar, eggs, and vanilla until smooth.
  • In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  • Pour the brownie batter into the prepared pan and smooth the top. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs.
  • Allow the brownies to cool completely in the pan.

Mousse Preparation

  • For the mousse, heat the heavy cream in a saucepan until just simmering. Remove from heat and add the chopped chocolate, stirring until smooth. Let it cool slightly.
  • Once cooled, whip the chocolate mixture until soft peaks form.
  • Spread the chocolate mousse over the cooled brownies and refrigerate for at least 2 hours.

Serving

  • Serve chilled, topped with whipped cream and a dusting of cocoa powder if desired.

Notes

For variations, consider adding caramel between the brownie and mousse or flavoring the mousse with espresso or peppermint extract. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for longer storage.
