Ingredients
  

Base Ingredients

  • 100 g almonds
  • 30 g pumpkin seeds
  • 65 g sunflower seeds
  • 25 g puffed rice
  • 28 g ground flax seeds
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla essence
  • 75 ml maple syrup 1/4 cup + 1 tablespoon

Chocolate Topping

  • 85 g dark dairy-free chocolate For melting
  • Flaky sea salt for sprinkling Optional but recommended

Instructions
 

Preparation

  • Line a small baking tin with baking paper and lightly grease the bottom to prevent sticking.
  • Preheat the oven to 160°C / 320°F.
  • In a large bowl, combine almonds, pumpkin seeds, sunflower seeds, puffed rice, ground flax seeds, salt, and cinnamon.
  • Stir in the vanilla essence and maple syrup until everything is evenly coated.
  • Spread the mixture in the lined tin, pressing it down firmly with a flat-bottomed glass so there are no air pockets.

Baking

  • Bake for about 40 minutes, then remove from the oven and press the mixture again firmly to help the bites hold together.
  • Allow the mixture to cool completely before moving on.

Chocolate Topping

  • Melt the dark chocolate over a double boiler. Once smooth, spread it evenly over the top of the cooled nut mixture.
  • Place the tin in the freezer for 15 minutes to set the chocolate.
  • Cut into equal-size pieces with a sharp knife. Sprinkle lightly with sea salt if desired.

Storage

  • Store in an airtight container.

Notes

Make sure to compress the mixture well. Swap almonds for walnuts or cashews for a different flavor profile. For added protein, stir in a scoop of plant-based protein powder (may require more maple syrup). Store in the fridge for extra crunch or at room temperature for a softer bite.
