Ingredients
  

For the Phyllo Cups

  • 1 package Mini phyllo pastry cups Or make your own

For the Filling

  • 8 oz Cream cheese Or a vegan alternative
  • 1 tbsp Fresh herbs Like dill or parsley
  • 2 tbsp Dijon mustard For a bit of zing
  • 4 oz Smoked salmon Or roasted vegetables for a vegetarian option
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Olives For garnish
  • 1 cup Grated cheese Such as cheddar or feta

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C), if using phyllo cups.
  • If using phyllo pastry, cut them into small squares and gently press them into a mini muffin tin.
  • Bake for about 10-12 minutes until golden and crispy. Cool slightly.
  • In a mixing bowl, combine the cream cheese, herbs, and mustard until smooth.
  • Fill each phyllo cup with a generous dollop of the cream cheese mixture.
  • Top with a piece of smoked salmon or roasted vegetables, followed by a cherry tomato half.
  • Sprinkle grated cheese and garnish with olives if you like.
  • Serve immediately or refrigerate until ready to serve.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. You can also freeze them before baking — just allow for extra baking time when cooking from frozen.
