Ingredients
  

For the Filling

  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

For the French Toast

  • 8 thick slices brioche bread
  • 2 large eggs
  • ½ cup milk (or almond milk)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 2 tbsp butter (for frying)

For Coating

  • ½ cup granulated sugar
  • 1 tsp ground cinnamon

Preparation

  • Make the filling: beat cream cheese, powdered sugar, and vanilla until smooth.
  • Spread filling on 4 slices of bread, then top with remaining slices to form sandwiches. Press edges gently to seal.

Cooking

  • In a shallow dish, whisk eggs, milk, vanilla, and cinnamon.
  • Heat a skillet over medium heat and melt 1 tbsp butter.
  • Dip each sandwich into the egg mixture, coating both sides, and place on the skillet. Cook 2–3 minutes per side until golden brown and crisp.
  • Mix sugar and cinnamon in a bowl. While warm, roll each toast in the cinnamon sugar mixture until coated.
  • Slice diagonally, serve warm, and enjoy!

Notes

Best enjoyed fresh, but you can refrigerate leftovers and reheat in the oven. Substitute cream cheese filling with Nutella, peanut butter, or fruit preserves for variety. Prepare the cream cheese filling the night before to save time in the morning. Top with whipped cream, drizzle with caramel sauce, or serve with fresh berries for extra indulgence.
