  • 1 cup cottage cheese Ensure smooth texture for best results
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple Can substitute grated apple for applesauce
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional) Adjust sweetness to taste
  • 1/2 tsp baking powder
  • 1 pinch salt

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini muffin liners.
  • In a mixing bowl, combine the cottage cheese, oats, applesauce (or grated apple), egg, cinnamon, honey or maple syrup, baking powder, and a pinch of salt. Mix everything until it’s well combined.
  • Let the batter rest for 5 minutes to absorb moisture and improve texture.
  • Scoop the mixture into the prepared muffin pan, filling each cup almost to the top.
  • Bake in the oven for 18–20 minutes or until the bites are set and lightly golden on top.
  • Allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Enjoy warm with almond butter or fresh fruit. Store in an airtight container in the refrigerator for up to 4 days, or freeze for longer storage.
