Ingredients
  

For the Dough

  • 1.5 cups 1 ½ cups warm water (110°F)
  • 2.25 tsp 2 ¼ tsp instant yeast (1 packet)
  • 1 tbsp 1 tbsp granulated sugar
  • 1 tsp 1 tsp salt
  • 4 cups 4 cups all-purpose flour
  • 2 tbsp 2 tbsp unsalted butter, melted

For the Baking Soda Bath

  • 4 cups 4 cups water
  • 0.25 cup ¼ cup baking soda

For Coating

  • 0.5 cup ½ cup granulated sugar
  • 1 tbsp 1 tbsp ground cinnamon
  • 4 tbsp 4 tbsp unsalted butter, melted

Instructions
 

Preparation

  • In a large bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  • Add salt, flour, and melted butter. Mix until dough forms, then knead for 5 minutes until smooth and elastic. Cover and let rise for 1 hour.

Baking

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  • In a pot, bring 4 cups water and baking soda to a boil.
  • Divide dough into 8 pieces. Roll each into a rope (about 18 inches) and twist into a pretzel shape.
  • Carefully dip each pretzel in the boiling baking soda bath for 20–30 seconds, then place on the prepared baking sheet.
  • Bake for 12–14 minutes, until golden brown.
  • While warm, brush pretzels with melted butter, then toss or sprinkle with cinnamon sugar mixture.

Notes

Keep leftovers in an airtight container for up to 2 days. Reheat in the oven for 5 minutes to refresh. Freeze unbaked pretzels after shaping; bake from frozen, adding 2–3 minutes to cook time. For extra indulgence, add a cream cheese glaze drizzle or serve with caramel dipping sauce.
