  • 1 cup unsalted butter, softened Make sure the butter is softened but not melted.
  • 1 cup granulated sugar Can be substituted with coconut sugar, but may alter flavor.
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Can swap half for whole wheat flour.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Drop rounded tablespoons of dough onto ungreased baking sheets, allowing enough space between each cookie.
  • Bake for 10-12 minutes or until the cookies are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months with parchment paper to prevent sticking.
