Ingredients
  

Pasta and main ingredients

  • 8 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced Can substitute with green olives
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped For garnish and flavor
  • 1/2 cup mozzarella balls

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the tortellini according to the package instructions. Once finished, drain and let cool.
  • In a large bowl, combine the cooled tortellini with cherry tomatoes, diced cucumber, sliced black olives, finely chopped red onion, fresh parsley, and mozzarella balls.

Dressing

  • In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until well combined.
  • Pour the dressing over the tortellini salad and gently toss everything together until all ingredients are evenly coated.

Chill

  • Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

This salad is best served chilled and can be garnished with extra parsley. It pairs well with garlic bread or grilled meats.
