  • ½ cup diced bell pepper

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  • In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  • Stir in the chopped spinach, diced bell pepper, and onion along with garlic powder, onion powder, salt, and black pepper.
  • Fold in the shredded cheese and pour the mixture into the prepared baking dish.
  • Bake for 40-45 minutes until the bake is set and golden brown on top. Allow it to cool for about 5 minutes before cutting into squares.

Notes

Serve alongside fresh fruit, a light salad, or toasted bread. It pairs well with mimosas or coffee for brunch and can be enhanced with fresh herbs or a dollop of salsa.
