Main Ingredients

  • 1 lb Chicken (breast or thighs) Use either breast or thighs for the soup.
  • 8 oz Egg noodles Egg noodles are best for texture.
  • 2 cups Carrots, chopped
  • 2 cups Celery, diced
  • 1 cup Onion, diced
  • 2 cloves Garlic, minced
  • 6 cups Chicken broth This broth is the heart of the soup.

Seasonings

  • 1 tbsp Dried thyme
  • 2 leaves Bay leaves
  • to taste tsp Salt
  • to taste tsp Pepper

Preparation

  • In a large pot, heat a drizzle of olive oil. Sauté onions, garlic, celery, and carrots until they soften, about 5-7 minutes.
  • Add the chicken pieces, season with salt and pepper, and brown them slightly on all sides.
  • Pour in the chicken broth, tossing in bay leaves and thyme. Bring the mixture to a gentle simmer.
  • After 20 minutes, remove the chicken, shred it with two forks, and return it to the pot.
  • Stir in the noodles, cooking until tender, about 8-10 minutes. Taste and adjust seasoning as needed.
  • Serve hot, garnished with a sprinkle of fresh parsley.

Notes

Store any leftovers in an airtight container for up to three days. You can also freeze portions for up to three months. When reheating, add a splash of broth or water as needed.
