  • 1 tablespoon mayonnaise Adds creaminess to the filling.

For the croissants

  • 4 pieces croissants Store-bought or homemade.

Preparation

  • Preheat your oven to 350°F (175°C) if you're using fresh croissants.
  • Slice each croissant in half lengthwise without cutting all the way through.
  • In a bowl, combine the crab meat, mayonnaise, lemon juice, salt, and pepper. Mix gently to avoid breaking up the crab.
  • Add the diced strawberries, sliced bananas, and blueberries to the crab mixture, and fold them in carefully.
  • Spoon the filling into each croissant, generously packing it.
  • Place the croissants on a baking sheet and warm in the oven for about 10 minutes.
  • Remove from the oven and serve warm.

Notes

For a vegetarian option, replace crab with a mix of creamy avocado and chickpeas. Store leftovers in an airtight container in the refrigerator for up to two days. Reheat in the oven at 350°F until warmed through, about 5-7 minutes.
