  • 2 large boneless skinless chicken breasts
  • Salt & pepper, to taste
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Cajun seasoning (no- or low-salt preferred) plus 1 tablespoon divided
  • Flour, for dredging
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup chicken broth
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated Parmesan cheese

Preparation

  • Slice each chicken breast lengthwise to create four thin cutlets. Season with salt, pepper, garlic powder, and 1/2 teaspoon Cajun seasoning. Dredge lightly in flour.
  • Heat butter and olive oil in a skillet over medium high heat. Add the chicken and cook for 4 to 5 minutes per side until golden. Remove from skillet and set aside.
  • Add minced garlic, sun-dried tomatoes, and chicken broth to the hot skillet. Let bubble for 30 seconds while scraping up flavorful browned bits.
  • Reduce heat to medium. Stir in the heavy cream and the remaining 1 tablespoon Cajun seasoning until smooth.
  • Return chicken to the skillet. Simmer for about 5 minutes until the chicken is cooked through and the sauce thickens slightly.
  • Sprinkle Parmesan over the top (or stir it into the sauce) and adjust seasoning with extra salt and pepper if needed.
  • Serve immediately with your favorite side and spoon plenty of sauce over each piece.

Notes

Use freshly grated Parmesan for the creamiest, smoothest sauce. If the sauce thickens too much, add a splash of broth to loosen it. For spicier chicken, add extra Cajun seasoning or a pinch of cayenne. This dish pairs beautifully with rice, pasta, mashed potatoes, or roasted veggies. Leftovers reheat well on the stovetop with a bit of added cream.
